Easy and quick lunch or dinner

I love to cook, but sometimes I’m just plain lazy and don’t feel like it. Then there’s also the fact that we’re trying to be more healthy with our meals but without going to the extremes of eating only that which is nutritious but not delicious. I love cooking too much for that.

So when I don’t feel like cooking or when Ryan is home alone for lunch, he usually buys frozen pizzas that he can just pop in the oven and voila! But that always leaves him feeling gross and me guilty for not preparing something more wholesome. Frozen prepared meals are definitely not healthy.

Here’s our solution: homemade pizza! Ok, ok, I know it doesn’t sound like a big deal, but after trial and error we finally found the recipe that works for us: its fast, healthy, and totally delicious! Plus, obviously totally customizable to your preference of ingredients! Ryan likes it with pepperoni, and I don’t. I put pizza sauce on his pizza but not on mine…. It works any way!

The Basics:

– Whole wheat tortillas

– Mozzarella cheese

– Organic pizza sauce

Our favorite toppings

– Mushrooms

– Green peppers

– Turkey pepperoni

How we make them

I love mushrooms, but I don’t like them when they’re big and slimy. So I always slice them thin, and then sauté them with salt and pepper…. They smell so delicious while they cook, and then will have a kick to them if you add enough black pepper. I then use the same pan to sauté the green peppers, which I julienne (slice in long strips), and also season with salt and pepper.

Then you just assemble like you would any pizza: sauce, cheese, and then the toppings. And finally you put them in the oven or toaster oven for a few minutes for the cheese to melt and the tortilla to crisp up a bit…. But keep an eye on it, whole wheat tortillas are thinner than the regular one so they can burn faster!

And there you have it, a homemade pizza, that tastes like a flatbread but even better because you made and know exactly what goes into it… So use organic and all natural ingredients! This is perfect for a lazy and fast, but good, meal; for pizza parties; or to include kids in the cooking process!
